Abstract

The changes on these seeds during storage: total oil, volatile oil,  and  the  major  components  of volatile  oils  were  determined.  A decrease in the total and volatile oils and all     components of volatile oils were found.   The  components  of  volatile  oils  during  growing  periods were  studied.  Three  samples,  first  at  (1/  May),  second  (15/  June), third (15/ July) were taken. The experiment found that the total and volatile  oils  were  increased  during  growing  stages.  The  same results for major compounds of volatile oils were  found.
Major  compounds  of  volatile  oils  were  found  at  (1/  May)except Linalool and Anisaldehyde were absent.  The  results  showed  that  the best  time  of  harvesting  for aniseed  was  at  the  last  stage  of growing  when  these  seeds  began dry,  but  not  absolute  dry,  because  this  could  decrease  the component of the total and volatile oils and their compounds.  The  seeds  should  be  dried  away from  sun  rays  to  save  its components.
